The use of animal by-products such as gelatine, carmine or even animal based mono and diglycerides can be problematic. Gelatine is the “magic binder” that gives the desired mouthfeel, smoothness and sheen. Marshmallows, a basic item in an ice cream parlour served in coffee or on waffles, in almost all instances, contains gelatine.
